Wilaya NAAMA specializes in traditional and inherited dishes, well known locally, enriching occasions and weddings.
AL-RAFIS: It is a traditional food present in all the homes of the Wilaya of the ostrich. It is served on various occasions like weddings, circumcision, and holidays. It is made from simple materials available in every household: medium semolina – donkey dates – ghee.
AL MAAKRA: It’s very similar to AL-RAFIS, except she was ready to take him on a trip.
Method of preparation: medium semolina – HAMIRA dates –
AL-ZARIZARI: Kalilah + Humira dates + ghee was prepared to be taken on a trip because it has been edible for a long time.
ROWENA: It’s made from wheat after it’s been placed on fire until it turns golden, then ground + ghee + sugar. It’s served on the occasion of the birth of a child.
AL-RUB: It is date jam, which is extracted from dates after being cooked and pressed using a thin piece of cloth
AL-KALILA: Al-Klila is made from milk after cooking it in a pan for some time, then putting it in a thin piece of cloth and pressing it, thus we get a cohesive substance called Al-Klila.
COUSCOUS IS THE MOST KNOWN DISH IN NAAMA : Despite the clutter of the Algerian table with its many colors of popular dishes and foods deeply rooted in local history, the ancient traditional dish “couscous” has an eternal place in the Algerian family of all kinds, insofar as it is now a legacy and a source of income for many families in several regions. Couscous is mainly cooked with a red broth with lamb and other vegetables. There are four types of food which differ according to size and cooking method, which are:
medium food, yield,
Saffron: (which is fine couscous), and finally broccoli.
Lean foods: This is called “SAFFAH”, which is served with yogurt or milk.
Thick food: This is called “MERDOUD” because it is served with a broth
AL-MATLOO : which is called tagine bread, as well as millet bread, which is a type of bread baked by fodder under ashes.
AL-MALAWI, AL-MUSMIN, AL-BAGHIRIR, AL-MABSAS, AL-MULKHALAH.
TRUFFLES : It’s called truffles or truffles, and it’s a tall mushroom that grows underground. It is widely eaten as an ostrich, and is considered a source of income for many people.
